Lemon Coconut Muffins

Ingredients:

1/
2
cup applesauce
1/2 cup agave nectar or organic raw sugar
1/4 tsp lemon juice
2 tsp lemon zest (I zested 2)
3/4 cup unbleached flour
1/2 cup oat flour, oats, or whole wheat flour
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp sea salt
1 cup shredded coconut

Directions:

1.
Preheat oven to 350 degrees.
2.Mix wet and dry ingredients separately.
3.Gently combine the wet and dry ingredients, taking care not to over-mix.
4.Pour into lined muffin cups.
5.Bake for approximately 20 minutes.
