Smashed Redskin Potatoes
Ingredients:
1 1/2 lb mini redskin potatoes
1 tsp sea salt, plus additional to taste
1/2 c soy sour cream
3 Tbsp fresh lemon juice
2 Tbsp chopped fresh chives
Fresh ground black pepper
Directions:
1. In medium pot, add potatoes and cover with cold water.. Bring to boil on high.
2. Add salt and cook until tender, about 10 min.
3 Remove from heat, drain, return potatoes to pot.
4. Coarsely smash with potato masher or fork. Fold in remaining ingredients. Season to taste with salt and black pepper.
